The estate takes its name from \"La Patience,\" a wild aromatic Mediterranean herb found throughout the vineyards. Christophe converted the family domaine to organic farming in 2007 and now farms 100 hectares of certified organic vines. The grapes are direct-pressed and vinified in temperature-controlled concrete and stainless steel tanks, then rested three months in concrete before a light filtration and January bottling.
