The Cuvée du Professeur comes from a 0.25-hectare parcel of Savagnin vines in the Sous-Roche vineyard in Château-Chalon, planted on clay-marl soils. Vinified ouillé (topped up) rather than sous voile, preserving vibrant freshness without the oxidative character of Vin Jaune. Fermented and aged in Burgundian barrels with little to no sulfur, bottled unfined and unfiltered. Certified organic (Ecocert). The 2022 vintage received a 97-point score from Wine Advocate.
