1. 2022 “Noella” - Grenache Blanc & a Whisper of Roussanne The "Noella" is a testament to the meticulous selection of barrels of macerated Grenache Blanc. This wine is a harmonious blend of focused, linear, and zippy characteristics, coupled with light flor development. It's a celebration of the ocean's influence, both in the vineyard and the cellar. The addition of a whisper of Roussanne adds a roundness and lushness to the wine, making it beautifully hazy and intriguingly complex. With a nose of apple skin and fenugreek, and notes of Mandarin Orange, Dole Whip, and Musk Melon, this wine is a sensory delight. Featuring an 8-day maceration of both Vermentino and Grenache Blanc, and a 4-day carbonic maceration of Muscat, this wine is a masterpiece of aromas and flavors. It opens with quince skin and peach aromas, leading to preserved citrus and tropical fruit notes. The musky and floral finish of Muscat adds a unique dimension, making it salty, citrusy, and enchantingly floral. The notes of Quince Skin, Preserved Citrus, and Elderflower make "Esmé" an excellent companion to dishes like Poulet au beurre noisette.
3. 2022 “Céleste” - Counoise The "Céleste" is a striking expression of Counoise, showcasing the varietal's distinct characteristics. This wine is crafted through a careful process of destemming and a week-long maceration. Before bottling, a small amount of Muscat is blended in, adding an extra layer of complexity. The result is a wine with a smoky and animal profile, highlighted by orange rind accents. Its lingonberry tartness is balanced by a nice texture, and it finishes with herbal and animal nuances that linger delightfully. Notes of Rooibos Tea, Lingonberry, and Herbs make "Céleste" a perfect match for tea-smoked duck.
