Made from Welschriesling and other indigenous white varieties grown on the sandy, mineral-rich soils of Illmitz on the Neusiedlersee, this wine is the product of Tschida's fully biodynamic farming and total non-intervention in the cellar: spontaneous fermentation, no additions, no fining, no filtration, and no sulfur. Tschida's approach is almost philosophical in its restraint — he believes the wine is already complete in the vineyard, and the cellar's only job is not to get in the way. The result is a wine of extraordinary purity and tension, with an ability to age and develop that defies its modest alcohol.
