The fruit is sourced from a rotating collection of head-trained, dry-farmed old vines — many over 50 to 100+ years old — from historic vineyard sites across Sonoma, Lodi, Contra Costa, and beyond, including the legendary Montafi Ranch and Pagani Ranch. Each lot is fermented separately with native yeasts using 20–50% whole clusters for aromatic complexity and spice, then aged in neutral French oak puncheons and demi-muids to keep the focus on the vineyard rather than the barrel.
