"La Gorda Yori" Blanco is Bichi’s expressive, low-intervention white expression sourced from dry-farmed old vines rooted in the decomposed granite soils of Tecate. The hand-harvested grapes undergo a gentle combination of direct press and short skin contact to build aromatic lift and phenolic structure. Fermented naturally in neutral vessels and traditional clay amphorae before bottling completely unfiltered and zero-zero, the 2025 vintage delivers a striking balance of ripe orchard fruit, herbal complexity, and a distinct maritime salinity, all framed by a bright, mouthwatering acidity.
