Bodega Cauzón is a legendary natural wine project led by winemaker Ramón Saavedra in Cortes y Graena, a small village perched at the northern foot of Spain’s Sierra Nevada mountains in Granada. A former chef who returned to his family's land to make wine, Ramón is a purist and pioneer of the Spanish zero-zero natural wine movement. His vineyards are situated at extreme altitudes—between 1,000 and 1,200 meters above sea level—planted on complex alluvial, gravel, and clay soils. High elevation provides drastic diurnal temperature shifts, allowing the grapes to ripen intensely while retaining mouthwatering natural acidity. In the cellar, Ramón practices zero-zero winemaking: spontaneous wild fermentations, no oak, no fining, no filtration, and absolute zero added sulfur dioxide.
The Wine
"Cabronicus" is a wild, soulfully raw red cuvée that showcases the unique intersection of international red varieties with Granada's high-altitude mountain terroir. Sourced from organically farmed, high-elevation vineyards, the grapes (predominantly Cabernet Sauvignon blended with Merlot and local red varieties) undergo spontaneous fermentation using native yeasts in neutral stainless steel and fiberglass tanks.
