Bodega Vinificate is an innovative, revolutionary natural wine project founded in Chiclana de la Frontera by brothers Miguel and José Gómez (affectionately known as the "Mahara" brothers). Located in the Cádiz province of southwestern Spain, the Gómez brothers set out to redefine the region's historic identity—moving away from fortified Sherries to craft unfortified, raw, and expressive wines from ancient local varieties. Farming their vineyards organically on prized, chalky white albariza soils, they work with absolute respect for nature. In the cellar, Vinificate practices a strict zero-zero natural winemaking ethos: spontaneous fermentations with native yeasts, no oak masking, no fining, no filtration, and zero added sulfur dioxide.

The Wine
"Amorro Espumoso" is an electric, ocean-salted natural sparkling wine (pétillant naturel) made entirely from 100% Palomino Fino grown on bright white albariza soils. The hand-picked grapes undergo spontaneous wild yeast fermentation in neutral vessels. Before the sugar is fully consumed by the native yeast, the wine is bottled under a crown cap to finish fermentation in the bottle (ancestral method), naturally trapping a soft, energetic bubble. Kept unfined, unfiltered, and undisgorged on its lees with no added SO2, the 2022 vintage captures pure coastal Atlantic energy; it masterfully pairs an expressive nose of salted citrus, chalky minerals, and faint bakery notes with a bone-dry, high-acid palate and an addictive, sea-breeze finish.
