Region: Abruzzo (Teramo / Montorio al Vomano), Italy
Grapes: 100% Trebbiano d'Abruzzo

Pairing: Continuous charcuterie boards, grilled arrosticini, baccalà alla abruzzese, roasted pork loin with herbs, seafood risotto, or aged pecorino abruzzese
The Producer
Cantina Indigeno is a celebrated natural wine collective based in Abruzzo, founded by four friends—Alfredo, Matteo, Nicola, and Fabio. Working out of the mountainous hinterlands near Teramo, they manage wild, high-altitude vineyards grown on limestone and clay soils between the Apennine mountains and the Adriatic Sea. Practicing strict zero-zero winemaking, Indigeno focuses on spontaneous fermentations using native yeasts, aging almost exclusively in open vats and neutral fiberglass tanks to avoid oak influence, and bottling everything completely unfiltered, unfined, and without added sulfur.
The Wine
"Boccia Bianco" (served in a generous 1-liter bottle) is Indigeno’s ultra-refreshing, highly glou-glou expression of Trebbiano d'Abruzzo with skin contact. The hand-harvested grapes undergo a short maceration on their skins (roughly 3 to 5 days) in open fiberglass tanks, extracting a cloudy golden-amber color and light phenolic texture without losing brightness. Fermented spontaneously and bottled completely raw, the 2023 vintage pairs explosive aromatics of citrus peel and mountain herbs with a driving, palate-cleansing acidity and a bone-dry mineral grip.

What is natural wine?
Natural wine is wine made with minimal intervention from the winemaker, using organically or biodynamically grown grapes and without the addition of chemicals or additives such as sulfites. The result is a wine that is unique, expressive, and often has a more complex and nuanced flavor profile than conventional wines. Natural wine is also often associated with sustainable and ethical farming practices, making it a popular choice for those interested in environmentally friendly and socially responsible products.
