Region: Novi Ligure, Piedmont, Italy (Vino d'Italia)
Grapes: Dolcetto, Barbera, and/or other indigenous Piedmontese red varieties
Body: Light to medium
Notes: Fresh and earthy. Dark cherry, blackberry, dried violet, licorice, and a savory, mineral finish with fine-grained tannins. "Semplicemente" means simply — and simply delicious is exactly what this is.
Pairing: Pasta al ragù, grilled sausages, pizza, roasted eggplant, or a classic Piedmontese antipasto spread.

Cascina degli Ulivi "Semplicemente" is produced by Stefano Bellotti's legendary biodynamic estate in Novi Ligure, in the Monferrato hills of southeastern Piedmont — one of Italy's most important natural wine reference points. Bellotti, who passed away in 2018, spent decades converting the estate to biodynamics and farming a diversity of indigenous Piedmontese varieties entirely without synthetic treatments, chemical additions, or compromise. The estate is now carried forward by his family with the same unshakeable philosophy. "Semplicemente" — Italian for "simply" — is exactly that: a pure, unpretentious red from the estate's own organically certified vineyards, fermented with native yeasts and bottled without fining or filtration. It captures everything Bellotti believed about wine: that the land, farmed with care and humility, needs nothing added to express itself beautifully.

What is natural wine?

Natural wine is wine made with minimal intervention from the winemaker, using organically or biodynamically grown grapes and without the addition of chemicals or additives such as sulfites. The result is a wine that is unique, expressive, and often has a more complex and nuanced flavor profile than conventional wines. Natural wine is also often associated with sustainable and ethical farming practices, making it a popular choice for those interested in environmentally friendly and socially responsible products.
