Grapes: 100% Chardonnay
Body: Light-Medium
Tasting notes: Pear, white flowers, chalky minerality, orchard fruit, citrus, gentle freshness
Pairing: Shellfish, fish en papillote, goat cheese, leek gratin, aperitif
Château de Javernand is a stunning 19th-century estate perched above the village of Chiroubles, family-owned since 1917 when Arthur Fourneau's great-grandfather Auguste Faye — a Mâcon wine merchant — fell in love with the property and bought everything on the spot. Today fifth-generation Arthur runs the estate with his close friend Pierre Prost, who joined in 2011 after marrying Arthur's cousin Mathilde. They farm ~10 hectares of Chiroubles plus 3 hectares of Chardonnay on clay-limestone in the southern Mâconnais, currently in organic conversion with an agro-ecology approach including tree planting. The "JP" cuvée honors Jacques Prost — Pierre's father, who made this wine until 2013. Certified organic fruit from 20–40-year-old vines, direct-pressed, naturally fermented with indigenous yeasts, no sulfur at pressing, aged on fine lees in concrete with zero oak. Golden-hued with fresh pear, white flowers, and a chalky mineral backbone that screams limestone. Beautifully clean, beautifully priced, and made with real heart.

What is natural wine?
Natural wine is wine made with minimal intervention from the winemaker, using organically or biodynamically grown grapes and without the addition of chemicals or additives such as sulfites. The result is a wine that is unique, expressive, and often has a more complex and nuanced flavor profile than conventional wines. Natural wine is also often associated with sustainable and ethical farming practices, making it a popular choice for those interested in environmentally friendly and socially responsible products.
