Region: Colli Perugini DOC, Umbria, Italy (Sant'Enea)
Grapes: 60% Sangiovese, 30% Merlot, 10% Cabernet Sauvignon
Body: Medium to Full
Notes: Ripe plum, red currant, and cedar with soft floral notes, a touch of oak, and a fading incense-like finish
Pairing: Roast red meat, game, or pappardelle with meat sauce

The Producer
Saliato takes its name from the parcel of land where Chiorri's winery itself sits, the vineyard that has hosted the family's cellar for five generations. Now run by Monica Chiorri and her husband Francesco, the estate blends deep Umbrian tradition with a modern, sustainability-focused approach, having been the first winery in the region certified under Italy's SQNPI system.

The Wine
Saliato blends Sangiovese with Merlot and Cabernet Sauvignon, aged in oak barrique for added structure and depth. The 2023 shows an intense ruby red with garnet reflections, opening with ripe plum, red currant, and soft floral notes layered over cedar and light spice. On the palate it's smooth, persistent, and pleasantly tannic, with a distinctive fading incense note on the finish.

What is natural wine?

Natural wine is wine made with minimal intervention from the winemaker, using organically or biodynamically grown grapes and without the addition of chemicals or additives such as sulfites. The result is a wine that is unique, expressive, and often has a more complex and nuanced flavor profile than conventional wines. Natural wine is also often associated with sustainable and ethical farming practices, making it a popular choice for those interested in environmentally friendly and socially responsible products.
