Grapes: 100% Chardonnay
Body: Light to medium
Notes: Pure and razor-sharp. Lemon, green apple, white grapefruit, oyster shell, and a long flinty finish. Classic Chablis that makes Chardonnay believers out of everyone.
Pairing: Fresh oysters, shrimp, grilled sole, goat cheese, or anything that benefits from high acidity.
Domaine Oudin Chablis is produced by Jean-Claude and Nathalie Oudin at their small family domaine in Chichée, a village in the heart of the Chablis appellation in northern Burgundy. The Oudins farm their Kimmeridgian limestone and clay soils — the ancient seabed that gives Chablis its signature flinty, oyster-shell minerality — with organic and sustainable practices, working each plot by hand to maximize expression of terroir. The 2023 vintage in Chablis benefited from a warm growing season with well-timed rains, producing grapes with exceptional ripeness and preserved acidity. Fermented and aged entirely in stainless steel with no oak influence, this is Chablis in its purest, most terroir-driven form: bright, electric, and uncompromisingly mineral. An under-the-radar domaine making wines that punch well above their appellation price point.

What is natural wine?
Natural wine is wine made with minimal intervention from the winemaker, using organically or biodynamically grown grapes and without the addition of chemicals or additives such as sulfites. The result is a wine that is unique, expressive, and often has a more complex and nuanced flavor profile than conventional wines. Natural wine is also often associated with sustainable and ethical farming practices, making it a popular choice for those interested in environmentally friendly and socially responsible products.
