The 2025 "Céline" is a brilliant, phenomenally energetic chillable red wine—constructed as a field blend and co-ferment that purposefully blurs the boundaries between light red and dark rosé. This unique Vin de France bottling co-ferments 40% Gamay and 20% ancestral red Mondeuse alongside a structural 40% splash of white Chardonnay grapes. Hand-harvested from mature vines planted on calcareous clay soils, the whole clusters undergo a spontaneous, partial whole-cluster fermentation driven exclusively by native wild yeasts in temperature-controlled stainless steel vats. Bypassing modern oak manipulation to preserve maximum primary fruit purity and alpine tension, the resulting highly scannable vintage strikes an incredible structural balance; it pairs a deep, translucent rhubarb color with an explosive, mouthwatering palate of crunchy red berries and an electric, saline-driven limestone minerality.
