Attia Bianco comes from Etnella, a natural wine project on the volcanic slopes of Mount Etna led by Davide Bentivegna. The grapes are sourced from old vines planted in terraced, volcanic soils at around 750 m altitude, trained in traditional alberello (bush) style. The wine is made with short skin contact (~1-4 days) before pressing; fermentation occurs spontaneously on indigenous yeasts and it spends several months aging in steel on lees. This minimal-intervention approach highlights fresh fruit, subtle texture from the light maceration, and the savory, saline influence of Etna’s volcanic terroir.
