"Pur Jus" is a collaborative project between two champions of the modern Southwest France natural wine revolution: Fabien Jouves (of Mas del Périé) and Germain Croisille (of Domaine Croisille). Both winemakers are renowned for farming high-altitude limestone plateau plots organically and biodynamically. Working together under the Pur Jus banner, their shared vision is to produce hyper-pure, energetic natural wines through strict low-intervention principles: hand-harvesting, spontaneous native-yeast fermentations, zero additives, zero filtration, and little to no added sulfur.
The Wine
"Pur Jus" Orange is an energetic, skin-contact white wine crafted from organically farmed white grape varieties (such as Gros Manseng and Ugni Blanc) grown on the Causse plateau's clay and limestone soils. The hand-harvested grapes undergo extended skin maceration during spontaneous wild-yeast fermentation in neutral vessels, imparting a glowing golden-amber color, complex herbal aromatics, and structural phenolic grip. Bottled completely unfiltered and zero-zero, the 2024 vintage masterfully pairs dried orchard fruit and citrus zest notes with a vibrant, mouthwatering acidity and a dry, savory finish.
