But Diego's operation is something altogether different: a passionately run, hands-on farm where goat cheese, vineyards, and animals all coexist under the same philosophy of honest, authentic production. "Ciuf Ciuf" — Italian onomatopoeia for the puffing sound of a steam train — is the estate's everyday red: bright, food-first, and built entirely for the pleasure of the table rather than the trophy shelf. Farmed organically with native yeast fermentation and minimal intervention in the cellar, bottled unfined and unfiltered.
