Operating under a strict minimal-intervention ethos, the winery works exclusively with sustainably and organically farmed estate vineyards. In the cellar, Franchere rejects industrial enological shortcuts, choosing instead to trust entirely in spontaneous fermentations with wild, native yeasts. By bypassing modern temperature-controlled tanks, complex mechanical filtration, and artificial additives, the domain allows the diverse, volcanic, and sedimentary soils of the region to dictate the physical identity of every bottle.

The 2025 "The Rosé" represents a highly anticipated, scarce release for the estate, marking the first time Hinds has crafted a traditional rosé since the 2017 vintage. This unique, all-estate grown cuvée utilizes an unconventional field blend, expertly anchoring the structure around 86% Pinot Noir, enhanced by 10% juicy Gamay and a aromatic 4% splash of Gewürztraminer. The hand-harvested grape clusters undergo an incredibly gentle press to extract a delicate, vibrant pink hue without pulling aggressive seed tannins into the juice. Following native fermentation, the liquid is allowed to settle naturally and is bottled completely unfined and unfiltered with exceptionally low sulfite additions. The resulting highly scannable vintage delivers a brilliant sensory profile—balancing crunchy orchard fruits and red-berry energy with a deep, mineral-driven backbone of wet slate.
