In the cellar, GPA practices strict minimal intervention: spontaneous fermentations driven entirely by ambient native yeasts, Ancestral Method sparkling winemaking, zero oak masking, no chemical additives, no fining, and no filtration to keep the energy of the vineyard intact.
The Wine
"It Is What It Is" is GPA’s aromatic, ultra-glou-glou Pét-Nat co-ferment. Sourced from organically farmed vines in the Paso Robles Highlands District, the blend combines highly aromatic varieties—Muscat, Gewürztraminer, and Riesling—harvested early to retain razor-sharp natural acidity. The hand-picked fruit undergoes a brief, spontaneous maceration and co-fermentation in stainless steel vats before being bottled while still actively fermenting (Ancestral Method). The wine finishes primary fermentation under crown cap to lock in natural carbonation, remaining completely undisgorged and raw. The 2024 vintage explodes with vibrant tropical aromas, high-toned citrus zest, and electric salinity, wrapped in a bone-dry, refreshing fizz.
