Henri Costal is a special collaboration between renowned American importer Kermit Lynch and Domaine Jean-Collet, a historic winemaking family in Chablis. Sourced from estate-owned, organically and sustainably farmed vines in the heart of Chablis, the cuvées under the Henri Costal label are crafted to reflect the pure, unadulterated Kimmeridgian limestone terroir of the region. Winemaking relies on low-intervention practices: gentle pressing, spontaneous wild yeast fermentations, minimal oak influence, and aging primarily in stainless steel or neutral barrels to preserve natural acidity and marine-driven minerality.
