Farming organically on warm, south-facing Moravian slopes, he prioritizes hand harvesting and living soil health. In the cellar, the project follows a low-intervention philosophy: fermenting spontaneously with native yeasts, aging in neutral wooden barrels or vats with prolonged lees contact, avoiding industrial filtration, and adding only minimal sulfur at bottling.
