Sourced from old-vine Chenin Blanc grown in Mendocino County — one of California's last remaining strongholds of the variety — the grapes are farmed organically and harvested by hand from vines that are old enough to produce the kind of concentrated, complex fruit that gives Chenin its legendary character. Native yeast fermentation, neutral oak aging, and bottling without fining or filtration preserve every nuance of the old-vine source material. Joel Burt and Eric Wareheim founded Las Jaras with a spirit of maximum fun, but the Cézanne is proof that they're playing for keeps.
