Les Vins Pirouettes is an innovative natural wine collective founded by legendary Alsatian winemaker Christian Binner. Designed to empower and promote small, organic, and biodynamic growers across Alsace, the project pairs Binner's oenological expertise with individual family farmers who cultivate their vineyards without synthetic inputs. Each cuvée highlights a specific grape and grower—in this case, François Bléger, whose family has farmed limestone and sandstone plots in Saint-Hippolyte for generations. In the cellar, Pirouettes wines follow a strict low-intervention ethos: spontaneous wild yeast fermentations, extended skin contact, no fining, no filtration, and zero added sulfur dioxide.

The Wine
"Orange Cubique de François" is an expressive, highly aromatic skin-contact white crafted entirely from 100% Gewürztraminer. Hand-harvested from François Bléger's organically farmed vines, the whole-cluster grapes undergo roughly two weeks of spontaneous carbonic maceration and wild yeast fermentation in stainless steel. The juice is then gently pressed and aged on fine lees in large neutral wooden foudres and stainless steel tanks before being bottled zero-zero. The 2024 vintage strikes a brilliant balance between Gewürztraminer’s signature heady, exotic floral aromatics and a refreshing, dry structural grip; it masterfully pairs punchy notes of lychee, orange peel, and warm spice with a lively Alsatian freshness and a long, savory finish.
