Oenops Wines was founded in 2015 by visionary winemaker Nikos Karatzas in Prosotsani, near Drama in Northern Greece. As a pioneer of the modern Greek wine renaissance, Karatzas set out to build a boutique, micro-winery that sources exceptional indigenous grape varieties from old, cool-climate vineyards across Macedonia and Crete. Embracing a low-intervention and terroir-focused philosophy, Oenops works without owning fixed vineyards—allowing Karatzas the freedom to partner directly with passionate growers who practice sustainable and organic farming. In the cellar, winemaking centers on minimal manipulation, utilizing spontaneous fermentations, native yeasts, neutral oak, stainless steel, and concrete amphorae to produce pure, energetic expressions of authentic Greek grapes.
The Wine
"Apla" (meaning "simply" in Greek) is a brilliantly balanced, highly scannable white blend crafted to showcase the synergy between three of Greece's most famous indigenous white grape varieties. Combining Malagousia for its lush floral aromatics and stone fruit depth, Assyrtiko for its razor-sharp acidity and laser-like mineral drive, and Crete's Vidiano for its silky texture and apricot notes, the grapes are hand-harvested from high-altitude plots. In the cellar, the parcels are vinified separately using native yeasts in stainless steel tanks, concrete vessels, and amphorae before being blended and matured on fine lees. The 2024 vintage captures vibrant Greek sunshine and mountain coolness; it masterfully pairs a fragrant bouquet of white blossoms, peach, and citrus peel with a crisp, mouthwatering acidity and a clean, saline-driven finish.
