Petracavallo Vino Bianco comes from historic vineyards in Mottola, on limestone and clay soils of Puglia’s Terra delle Gravine. The wine is made naturally: grapes are hand-harvested and undergo a short maceration followed by spontaneous fermentation with indigenous yeasts. It’s aged on lees in stainless steel for about six months, bottled without filtration and with very low added sulfur, producing a fresh, dynamic wine that expresses Mediterranean scrub, herbal brightness and mineral tension.
