Pheasant's Tears Khikhvi is a traditional qvevri-fermented amber wine made by John Wurdeman and Gela Patalishvili at their estate in Sighnaghi, in the Alazani Valley of Kakheti — Georgia's most celebrated wine region and the cradle of an 8,000-year-old winemaking tradition. Khikhvi is a rare indigenous Georgian white grape, prized for its aromatic intensity and golden color, grown on the red clay and alluvial soils of the valley floor. True to Georgian tradition, the grapes are fermented whole-cluster with extended skin contact in large clay qvevri vessels buried underground, where the wine rests through winter before being sealed and left undisturbed. No temperature control, no additions, no filtration — just grapes, qvevri, and time.
