Poderi Cellario is a third-generation family estate located in Carrù, on the far southern fringe of Piedmont’s Langhe hills where the vineyards meet the Maritime Alps. Run by husband-and-wife team Fausto and Cinzia Cellario alongside their children, the estate focuses entirely on indigenous Piedmontese grape varieties farmed organically across high-elevation, marl-and-limestone slopes. Operating with a strict low-intervention philosophy, the Cellario family avoids chemical inputs in the vineyard and crafts zero-zero cellar expressions using spontaneous wild-yeast fermentations, aging in non-traditional wood (like local acacia barrels) or terracotta, and bottling without fining, filtration, or added sulfites.
The Wine
"Acacia" is Poderi Cellario’s singular, textural take on Arneis—Piedmont’s flagship native white grape. Hand-harvested from high-altitude, organically farmed vines, the fruit undergoes spontaneous fermentation with indigenous yeasts on the skins for roughly five to seven days in stainless steel vats. Following pressing, the wine is transferred to large local acacia wood casks for several months of aging on the fine lees. The acacia wood imparts a distinct floral lift, subtle waxy richness, and honeyed complexity without masking the grape's raw mineral drive or imparting vanilla oak tannins. Bottled completely unfiltered and raw, the 2025 vintage balances vibrant citrus acidity with an alluring, textured palate and a dry, saline finish.
