The Wine
Burja "Malvazija" is a deeply authentic, characterful expression of Malvasia Istriana sourced from organically and biodynamically farmed vineyards rooted in flysch (local opoka soil composed of marl and sandstone). The hand-harvested grapes undergo a short, gentle skin-contact maceration (typically 2 to 7 days) and spontaneous fermentation with wild yeasts, extracting a rich golden hue, subtle phenolic grip, and complex botanical aromatics without masking the grape's natural freshness. Aged on fine lees in large neutral oak casks and concrete tanks, the 2021 vintage displays beautiful balance and tension; it masterfully pairs a complex bouquet of orchard fruit, dried citrus, and Mediterranean herbs with a driving mineral core, mouthwatering acidity, and a crisp, saline finish.
