Proyecto Nakkal is an exciting, minimal-intervention project at the forefront of Uruguay's natural wine revolution, founded by three young friends: Santiago Deicas, Nicolas Monforte, and Agustin Astiazaran. Located in the El Colorado subregion of Canelones—the historic heartland of Uruguayan viticulture—the trio works with small-scale, sustainable grape growers who farm without synthetic chemicals. Their mission is to craft wines that prioritize high drinkability, raw energy, and coastal freshness, using the intense maritime influence of the nearby Atlantic Ocean to counterbalance Uruguay's generous sunshine.

The 2024 "Simple" PetNat Blanco is a brilliantly fresh, fun, and aromatic sparkling wine made using the ancestral method (méthode ancestrale). The blend co-ferments the highly expressive Muscat of Alexandria with a touch of Viognier. The grapes are hand-harvested early to preserve their electric, mouthwatering acidity and are gently pressed before undergoing spontaneous fermentation with native wild yeasts in stainless steel tanks. Just before the natural sugars are completely consumed, the juice is bottled unfiltered and cap-sealed, trapping the remaining carbon dioxide to create a natural, fine-beaded carbonation. The result is an incredibly aromatic, bone-dry cloud of tropical flowers and crunchy orchard fruit on the nose, resting on a hazy, texturally creamy, and endlessly smashable palate that serves as a perfect introduction to South America's modern natural wine movement.
