De-stemmed and gently crushed; spontaneous fermentation with indigenous yeasts in stainless steel tanks, with punch-downs and no pump-overs.
Fermentation lasts 1 to 3 weeks, with free-run juice separated from pressed skins at dryness.
Aged in old Rauli wood barrels.
Bottled unfined, unfiltered, with minimal sulfur addition.
