Region: Central Coast, California, USA
Grapes: 100% Pinot Noir (Vinified as a White Wine)
Body: Light to Medium
Notes: White cherry, Rainier peach, lemon curd, wild strawberry tops, chalky minerality, and a crisp, high-toned acid finish
Pairing: Dungeness crab cakes, stone fruit and burrata salad, grilled prawns, roasted chicken with herbs, or light pasta primavera

So Far Out is a collaborative, low-intervention project spearheaded by a collective of young, boundary-pushing winemakers in California’s Central Coast. Operating with a playful, retro-futuristic aesthetic and a commitment to minimal manipulation, the project sources fruit exclusively from sustainably and organically farmed vineyards that feel the cooling, maritime influence of the Pacific Ocean. The philosophy here is all about capturing ultimate freshness and high drinkability, stepping away from the heavy-handed oak and over-extraction historically associated with the region to deliver pure, high-vibe juice.

The 2025 "This Could Be The Move" is a brilliant, unconventional Blanc de Noirs—a white wine crafted entirely from red Pinot Noir grapes. To achieve this, the hand-harvested fruit is immediately given an incredibly gentle, direct whole-cluster press, separating the clear juice from the skins before any color or heavy red tannins can bleed into the liquid. Fermented spontaneously with wild, native yeasts in temperature-controlled stainless steel tanks, the wine skips malolactic fermentation entirely to preserve its electric, mouthwatering nerve. The resulting bottle is a fascinating sensory trick: it carries the structural weight, subtle red-berry aromatics, and texturized depth of Pinot Noir, but presents it with the crisp, citrusy, and saline-driven refreshment of an elite coastal white wine.

What is natural wine?

Natural wine is wine made with minimal intervention from the winemaker, using organically or biodynamically grown grapes and without the addition of chemicals or additives such as sulfites. The result is a wine that is unique, expressive, and often has a more complex and nuanced flavor profile than conventional wines. Natural wine is also often associated with sustainable and ethical farming practices, making it a popular choice for those interested in environmentally friendly and socially responsible products.
