Fermented with native yeasts, 80% aged in oak barrels and 20% in stainless steel, vinified and bottled without any added sulfur. The wines carry a slightly oxidative, Jura-like character that divides but deeply rewards those who lean in. Fermentation and aging can last between 12 and 30 months depending on vintage.
