The Producer
Villa Corniole is an historic family estate located in Giovo, within the dramatically terraced Val di Cembra of Trentino-Alto Adige. Managed by the Pellegrini family—with winemaking overseen by daughters Sara, Linda, and Sabina alongside their parents—the estate specializes in high-altitude alpine viticulture. Growing vines on steep porphyry and calcareous-gravel terraces reaching up to 700 meters above sea level, Villa Corniole emphasizes sustainable viticulture, hand-harvesting, and gentle cellar practices to reflect the crisp purity, intense diurnal temperature shifts, and mineral backbone of the Alpine landscape.

The Wine
"Salisa" (a name honoring the family's daughters Sara, Linda, and Sabina) is Villa Corniole’s flagship vintage Metodo Classico sparkling wine, crafted entirely under the strict rules of the Trentodoc appellation. Sourced from high-elevation, hand-picked Chardonnay vines planted on porphyritic terraces, the fruit undergoes a gentle soft pressing followed by primary fermentation in temperature-controlled stainless steel. Secondary bottle fermentation is followed by an extended aging period of over 40 months on its lees prior to disgorgement. The 2020 vintage combines creamy autolytic depth and silky brioche notes with electric alpine acidity and a laser-like saline finish.

What is natural wine?

Natural wine is wine made with minimal intervention from the winemaker, using organically or biodynamically grown grapes and without the addition of chemicals or additives such as sulfites. The result is a wine that is unique, expressive, and often has a more complex and nuanced flavor profile than conventional wines. Natural wine is also often associated with sustainable and ethical farming practices, making it a popular choice for those interested in environmentally friendly and socially responsible products.
