Wavy Wines is a low-intervention natural wine project based in Northern California, founded by friends Jude Zasadzki and Ezra Kostelnik. Embracing a surf-and-skate-influenced, low-fi ethos, Wavy focuses on crafting high-energy, raw, expressive wines from organically farmed plots across Sonoma and Napa. In the cellar, Jude and Ezra follow strict zero-zero principles: spontaneous wild-yeast fermentations, extended skin-macerations on white varieties, non-traditional aging vessels (clay amphoras and neutral wood), no fining, no filtration, and zero added sulfites.
The Wine
"Cloud-Hidden" is Wavy’s flagship skin-contact orange wine, named as an homage to the classic Zen text Amongst White Clouds. Sourced from organically farmed Italian white varieties, the wine combines Vermentino (macerated on skins for 10 days) and Greco/Grechetto (macerated for up to 6 months in clay amphorae), blended back with a perpetual solera barrel started in 2021. Bottled completely unfiltered and raw, it strikes a balance between textural, tea-like grip, rich stone fruit, and bright, saline coastal acidity.
