Wonderwerk is an ultra-innovative, low-intervention natural wine project based in North Hollywood/Ventura, California, founded by high school friends Issam Kabbani and Andrew Jones. Operating with a playful, disco-infused ethos, the duo sources organically and biodynamically farmed fruit from unique, cool-climate sites across the Central Coast and Sierra Foothills. In the cellar, Kabbani and Jones take a radical, zero-zero approach: co-fermenting unexpected red, white, and skin-contact varieties together, using ambient native yeasts, avoiding temperature control, aging exclusively in neutral wood or poly containers, and bottling without fining, filtration, or added sulfites.

The Wine
"Marinara" is Wonderwerk’s energetic, tongue-in-cheek homage to Italian table red co-ferments, designed specifically to be served with a heavy chill alongside red-sauce dishes. The 2025 vintage brings together red-fruited, high-acid Sangiovese and old-vine Zinfandel co-fermented with a splash of aromatic Muscat. The hand-harvested grapes undergo spontaneous whole-cluster and partial carbonic maceration in open-top fermenters, extracting bright fruit, savory herbal notes, and crunchy texture without heavy extraction or harsh tannins. Aged short-term in neutral barrels and bottled completely raw, it bursts with tart berries, dried herbs, and coastal salinity, framed by a mouthwatering acidity that cuts effortlessly through rich foods.
