Moisès is fiercely dedicated to low-intervention winemaking, driven by a philosophy that going back to clean, chemical-free roots is a modern health and environmental necessity. The name "Mèdol" refers to the ancient Roman quarry nearby, and the numbering system on his labels represents the progression of his cuvées.
The "Base 1r Blanc" is his flagship, everyday white wine crafted from certified organic and regeneratively farmed vines rooted in poor, sandy-loam soils. These maritime vineyards heavily benefit from La Marinada—the cool, steady sea breeze that rolls in every afternoon to temper the fierce Spanish summer heat, locking a piercing freshness into the grapes. After a spontaneous fermentation using native yeasts, the juice is aged for nine months in stainless steel tanks with weekly lees-stirring (bâtonnage) to build a beautifully lush, slightly cloudy texture that balances its razor-sharp acidity.
