The Producer
Alessandro Viola is a small-scale, legendary natural winemaker operating near Alcamo in northwestern Sicily. Armed with a degree in viticulture and enology, Viola quickly rejected commercial industrial practices in favor of pure, zero-additive winemaking that honors Sicilian traditions. He farms small, high-altitude parcels organically and biodynamically, rooted primarily in limestone and clay soils that capture maritime ocean breezes. In the cellar, Viola’s rule is absolute: nothing added, nothing removed. Fermentations occur spontaneously with native yeasts, aging takes place in neutral oak, chestnut casks, or stainless steel, and wines are bottled unfined, unfiltered, and strictly zero-zero with no added sulfur.

The Wine
"Trebien" is Alessandro Viola’s signature, highly soulful expression of Catarratto grown on the chalky hillsides of Alcamo. Hand-harvested from organically farmed vines, the grapes undergo a short period of skin contact (around 3 to 7 days) during spontaneous fermentation with wild ambient yeasts, imparting a deep golden hue and rich textural structure without heavy extraction. Aged on its fine lees in neutral chestnut barrels and stainless steel, the 2025 vintage balances vibrant, sun-drenched Mediterranean citrus and orchard fruit with high-toned coastal salinity, fine phenolic grip, and a driving, bone-dry mineral finish.
