The Producer
Le Coste is an iconic, ultra-cult natural wine estate situated in Gradoli, overlooking the volcanic lake of Bolsena in northern Lazio. Founded by Gianmarco Antonuzi and Clementine Bouveron, the project encompasses roughly 14 hectares of wild, polycultural land farmed strictly according to biodynamic principles. Working almost exclusively with indigenous varieties, Gianmarco applies rigorous Burgundian precision to his ancestral terroirs. In the cellar, their philosophy is uncompromisingly zero-zero: spontaneous wild-yeast fermentations, extended macerations, long aging in neutral wood, no mechanical intervention, no fining, no filtration, and zero added sulfur.

The Wine
The "R" in Bianco "R" stands for Riserva—representing Le Coste’s flagship, most profound white expression. Crafted exclusively from ancient, low-yielding Procanico (the local, high-quality clone of Trebbiano) vines rooted in deep, iron-rich volcanic ash and dark sand, the hand-harvested grapes undergo roughly two to three weeks of spontaneous skin-contact fermentation in open chestnut and oak vats. The wine is then aged slowly on its fine lees in large neutral French oak casks for two full years before being bottled without sulfur additions. The 2021 vintage is a masterclass in tension, balance, and volcanic intensity, offering deep amber hues, rich phenolic weight, electric acidity, and an unforgettable, salty, mineral-driven persistence.

What is natural wine?

Natural wine is wine made with minimal intervention from the winemaker, using organically or biodynamically grown grapes and without the addition of chemicals or additives such as sulfites. The result is a wine that is unique, expressive, and often has a more complex and nuanced flavor profile than conventional wines. Natural wine is also often associated with sustainable and ethical farming practices, making it a popular choice for those interested in environmentally friendly and socially responsible products.
