Region: Santa Barbara County, California, USA (Los Olivos District)
Grapes: 100% Gamay Noir
Body: Light
Notes: Cranberry, wild strawberry, watermelon rind, wet slate, white pepper, snappy coastal salinity, crisp dry finish
Pairing: Fish tacos, goat cheese crostini, heirloom tomato salad, grilled octopus, pool-side chips and guac
While DISKO founder Sean Hogan gained natural wine street-cred for his wildly popular sparkling Pét-Nat version, this 2025 release is a beautifully still, direct-to-press expression of Gamay Noir. The fruit is entirely sourced from the organically farmed Oak Savanna Vineyard, situated on rocky, chamise shaly loam soils in the Los Olivos District. To capture the absolute freshest, high-toned assets of the variety, Hogan sends the hand-picked fruit straight to the press, avoiding extended skin contact to achieve an ethereal, translucent pale pink hue. The juice is fermented natively in a stainless steel tank before being racked to age for seven months in stainless steel barrels. Keeping the wine entirely out of wood highlights the grape's crunchy red fruit character and the electric, mouthwatering salinity that defines the Santa Barbara coast. Unfined, unfiltered, and bottled with only minimal sulfur, it is explicitly built to be served ice-cold, unpretentious, and "crushed" immediately.

What is natural wine?
Natural wine is wine made with minimal intervention from the winemaker, using organically or biodynamically grown grapes and without the addition of chemicals or additives such as sulfites. The result is a wine that is unique, expressive, and often has a more complex and nuanced flavor profile than conventional wines. Natural wine is also often associated with sustainable and ethical farming practices, making it a popular choice for those interested in environmentally friendly and socially responsible products.
