Bisio Devis is a small-scale, ultra-artisanal winemaker producing raw, site-specific natural wines in the rugged hills of Colli Tortonesi in southeastern Piedmont. Working with deep respect for local agricultural history, Devis focuses on high-altitude old-vine parcels planted on steep, clay-limestone soils. The vineyards are farmed strictly organically with zero synthetic chemicals or systemic inputs, encouraging healthy biodiversity and deep root systems. In the cellar, winemaking follows an uncompromising low-intervention philosophy: spontaneous fermentations driven solely by ambient yeasts, no temperature manipulation, no fining, no filtration, and zero added sulfur.
The Wine
"Molinet" is Bisio Devis's electric, ancestral-method sparkling expression crafted from dry-farmed old Riesling vines rooted in calcareous limestone soils. The hand-harvested grapes are gently pressed and undergo spontaneous wild-yeast fermentation in stainless steel vats. Before fermentation fully finishes, the wine is bottled under crown cap without any additives, fining, or filtration, allowing the natural fermentation to complete in bottle (Pétillant Naturel) and trap a light, creamy effervescence. The 2025 vintage bursts with high-toned citrus, white floral aromatics, and driving mountain acidity, rounded out by a chalky, mineral-laden finish.
