True to Sean's low-intervention philosophy learned from his uncle Mike Roth (of Lo-Fi Wines), the juice is fermented with native yeasts and aged for 11 months in neutral French oak barrels. The neutral wood gives the wine a subtle, silky texture without masking the hallmark snap of citrus and green fruit. It is an Old World-style white reimagined with California sunshine—unfined, unfiltered, and made explicitly for immediate drinking rather than tucked away in a cellar.
