Vinícola Atacalco is a boutique, low-intervention Chilean project dedicated to crafting expressive, site-specific natural wines from maritime and Andean terroirs. Focusing on cool-climate coastal regions like the Casablanca Valley, the project works with small-scale viticulturists who prioritize organic and sustainable farming. In the cellar, Atacalco adheres strictly to minimal-intervention principles: native-yeast fermentations, no industrial additives, no aggressive filtration or fining, and minimal sulfur at bottling to let the coastal minerality and grape purity show through.
The Wine
"Carabe de Casablanca" is Atacalco’s vibrant expression of Pinot Gris grown in the breeze-cooled, granite-rich soils of the Casablanca Valley. Benefiting from foggy morning maritime influences, the hand-harvested grapes undergo a gentle whole-cluster press alongside a brief period of skin contact to build subtle texture and aromatic intensity. Fermented spontaneously with wild yeasts in neutral vessels, the 2025 vintage balances crisp orchard fruits and delicate floral lift with a driving coastal acidity, fine phenolic structure, and a bone-dry, mineral-laden finish.
